Xuan Son duck grilled in bamboo — a forest feast served on a platter of leaves

Deep in the forests of Xuan Son National Park (Tan Son, Phu Tho), the local communities keep a cooking style thick with the mountains: food sealed in fresh bamboo tubes and roasted over embers — and the crown of that style is duck grilled in bamboo.

The leaf platter — Xuan Son's signature table

Before the duck arrives, the serving itself impresses: the feast is laid on platters lined with lush wild banana leaf — forest greens, bamboo shoots, sticky rice and meats arranged around — a rustic banquet expressing the forest-bound life of the Dao and Muong people here.

Bamboo-tube duck — the midland mountains' must-try

Firm hill-raised duck is seasoned with mountain spices (ginger, lemongrass, doi seed, wild herbs), packed into fresh bamboo, stoppered with dong leaf and turned steadily over glowing coals. The tube seals in the meat's juices while the green bamboo lends its cool fragrance — duck cooked this way is tender, succulent and scented in a way no charcoal oven can copy.

Enjoying it whole

Eat it hot the moment the tube is split, dipped in cham cheo or doi-seed salt; add a cup of leaf-yeast wine and steamed forest greens — the exact formula of a village feast. Groups should book ahead so fresh bamboo can be prepared.

Where to have it
